The Spring Breakfast ‘N Brunch Menu
You are going to need lots of eggs for this
issue. You’ll need them for Passover, for Easter and for these amazing
breakfast recipes. Holiday fare is on the list but we start, as we start
the day, with a great attitude and superb stuff for breakfast. Mix and
match the recipes or make them all for a brunch extravaganza. It’s all
good. A cornucopia of recipes, eggs-spressly created to start your day
in fine style. We got your Benedict, your crepe casserole, a sassy
stuffed biscuit, some springy salmon, and a veritable muffin basket
collection. We even have a Free!!
Primavera Quiche created for Molini
Pizzuti “OO” Flour. So, rise, shine and bake. Then go for a long walk!
The Skinny Cookie
No eggs, no butter, spelt and oatmeal, bit ‘o spice. This is the best
cookie, skinny or not, in the world. Replicated after a brand-name
Skinny Cookie at the local health food store (that cost $4.00) this is
big, funky, chunky, chewy, easy, sassy and healthy. Dig in.
Rise’n Shine Stuffed Biscuits
Drive-thru convenience, homemade taste in a biscuit that is buttery,
flaky and stuffed to the gills with a cache of tender scrambled eggs and
Tabasco. Yes, a pizza version is already on the BB Test Kitchen queue.
Swiss Crepe Casserole
Crepes, Bechamel, and Gruyere stack up mighty fine. A great Easter or
brunch surprise. A keeper for the hostess file repertoire.
Potatoes O’Brien
Just the side dish for your eggs, over easy. Trust the Irish to know
what’s best for spuds. A New York restaurant retro recipe.
Peach Cheesecake Scones
Younger than springtime, are these gorgeous, sunny scones.
Eggs Benedict Chez Nous
Want to visit a B&B or just get that B&B feeling? Make a batch of
Benedict. There’s nothing traitorous in the creamy, tangy taste of
Hollandaise, slathered over a poached egg on a toasted English Muffin.
South Western Tortilla Omelet
Peppers, Monterey Jack and thou. A zesty egg dish with an Egg White
Frittata variation.
Alsatian Rhubarb Tart
Great for brunch or a spring luncheon, tarts are all about eggy
goodness.
Primavera Quiche with Molini Pizzuti ’00’ Flour
An herb filled, mouth-wateringly tender tart is home to a zesty filling.
This is as sophisticated as you expect from quiche but as fun and
flavorful as pizza.
Bakeshop Double Chocolate Chunk Muffins
Chocolate for breakfast? Pourquoi pas? Big, bold Costco or Sam’s Club
style muffins.
Almond Poppy Seed Muffins
Sweet nuttiness. A reader requested these monster muffins she gets at
Sam’s Club. She asked, you get.
Apricot Bubka
You gotta have a bakery styled yeasted coffee cake. We had a hard time
getting the recipe back from our tester!
Sell-Out Banana Muffins
Huge caps, moist crumb, amazing taste.
Oatmeal Apple Sauce Raisin Muffins
Beautiful moist muffins with a slice of Red Delicious apple to perk them
up.
Biggest Ever Sour Cream Coffeecake
What’s brunch without this coffeecake classic?
Potage Bonne Femme
The flavor of spring in a soothing soup. So French, so sophisticated, so
you must make it.
Salmon in Parchment with Herbs
A hidden cache of salmon, slathered in herbs, microwaved to gourmet
perfection.
Passover Stuff
Tons more stuff is in the
Complete Recipe Archives or A Treasury of Jewish Holiday Baking. I
recommend Cola Brisket, Paradise Haroses and the legendary Potato Kugel.
We also welcome West Palm Beach Post readers.

Matzoh Buttercrunch
Here it is, free and from the original source. Enjoy! It’s not just for
Passover – this is a diet-buster treat no one can pass on.
Flourless Chocolate Torte with Baked-In Ganache
The ganache is baked into the batter for a velvety chocolate swirl cake
that will never make it to the second Seder. You will have to make
another one.
Incredible Passover Stuffing
This recipe doubles as a kugel or side dish but is good enough for a
regular Thanksgiving turkey. Sumptuous and savory.
Molten Chocolate Passover Torte
Make tiny ones or one large warm chocolate torte from this fantastic
recipe.
French Chocolate Cookies for Passover
Our tester intended to save these for Passover but they were devoured
soon after (successful) testing. Bite sized decadence.
Classic Coconut Macaroons for Passover
Why buy them? Use leftovers in Macaroon Brownies, a Mars bar brownie for
the Passover sweet table.
Seriously Good Chocolate Macaroons
Tons of chocolate, tons of taste. Add toasted pecans if you like.
Matzoh Brei
What’s a Passover breakfast without the brei?
Easter Baking
Lemon Meringue Cheesecake Truffles for Easter
How would you like to find these on your Easter Egg hunt? Delicate,
lemony treats with the best of both worlds: cheesecake and chocolate
truffles.
Hot Cross Buns
Did you know, once upon a time, you could be sued for baking these out
of season? Thank goodness this is now, not then! These are too good to
make once a year. They are soft, sweet, spongy, packets of spice and
sweet dough. Never buy; bake. Don’t forget Maple Hot Cross Buns or my
Hot Cross Scones in the Recipe Archives.
Field Berries and White Chocolate Biscotti
This is not biscotti – this is art. Fresh berries and a mantle of white
chocolate.
Golden Daffodil Cheesecake
A bloomin’ cheesecake of gold, with filo petals.
