These have yeast but no kneading. These are more of a pastry version of the Easter classic but a totally delightful treat -a delicate, spiced scone with a slick of fondant on the top.
A high rising, sweet soda bread that is Americanized, with add-ins of butter, sugar, honey, and a touch of cinnamon. Rustic but not dry and good fresh or toasted.
These are oversized scones with a soda bread birthright. Wonderfully rustic. You can make it more so by using more whole-wheat flour and you can also choose, sweeter, nuttier, white whole-wheat flour. To give as gifts, wrap a couple of these in brown paper or a pastry box with a green ribbon, or in twoâ€™s in a cello bag with a green ribbon and a side packet of Irish Breakfast or Assam tea.
What could possibly make a great soda bread even better? A little Bailey’s Irish Cream. You could serve this bread with corned beef and cabbage, a good Irish stew, or in hefty wedges with a sharp Irish or Guinness cheddar and pickled onions for a updated Ploughman's Platter. But given the wee dram of decadence, it would make a fine slice to serve with a steaming pot of Assam tea.
A little Irish whisky and buttermilk make this a superlative soda bread.
The cream and whisky glaze, applied just before baking, finishes it off.
Tons of butter, golden raisins, cranberries and cream make these the most tender, moist scones ever. They include a touch of whole-wheat flour for a rustic taste but with a refined heritage. These are a tribute to one of my inspirations, Miss Jane Austen and happen to be my best ever, personal favorite scones.
Although this is a recipe that exists in many versions, changing the fruit, as well as adding citrus zests and a bit more spice and vanilla makes this a particular favorite of most muffin fans. I make these most often with blueberries, raspberries, rhubarb, or diced apple. Banana chunk is also dandy.
