Oh heavens. This is heavenly. Ever get tired of crisp, hard biscotti BUT, like the wonderful sticks of cookie shape? This is a cakey, biscotti that is golden yellow with extra yolks and studded with both Kirsch soaked sour cherries, and shredded, dried sour cherries. After baking and slicing, the biscotti are slathered with the thickened cherry juice marinade with a sticky finish. Alternatively, you can also leave them plain, and just dust with a wee bit of confectioners’ sugar.
These are sublime and different but soon to become a classic, if not a staple in your kitchen. The cherry glaze or topping is optional and you can drizzle it on the finished cookies or as dip to plunk cookies into.
