These are coco-nutty to the nth degree. There is coconut milk, coconut, and coconut extract in the batter and a buttery frosting, also anointed with more shredded coconut. This recipe is pretty well genius. Wonderful in miniature form or for a bridal tea or early spring tea. The coconut milk comes in a can (about 12 ounces or 398 ml) and you must refrigerate overnight so that it thickens to a consistency of somewhat solid fat. Shake the can first and then refrigerate a few days or a night before you make these. Coconut Milk (Coco Rico is a popular brand) is widely available in Latin food stores.
