These are gingerbread men with shortbread issues. This is a sturdy gingerbread but short and crumbly at the same time - not bear-down-and-bite, make-a-house-with-the dough gingerbread. You can cut these in rounds or fingers, but mini gingerbread men make them sweet. Ice them afterwards but they are rather nice as is, dusted with fine cinnamon sugar. You can also use mini teddy bear cutters for this. The best cutters around, btw, are from Rochow in upstate New York. They make industrial gingerbread cutters and other shapes that will serve you for years. Tell them sent you. What's nice about this recipe is that it has holiday taste and appeal but with that wonderful shortbread crumb.
