Demeter is one of my favorites of Greek gods. She was sleek, savvy, feminine and self-reliant. This cake that is chocolaty in a pure and dramatic way, lofty and moist of crumb, somehow, organically correct. It is a cake good enough to honor the gods. Demeter just happens to be the most deserving. Use great semi-sweet chocolate for this, such as Callebaut, Lindt or Scharffen Berger. This phenom cakes takes melted chocolate, pure cocoa, butter and sour cream. The icing is totally optional. You can glaze this cake with a confectioner sugar/cocoa glaze and that would also be fast, simple and a touch less decadent than the whipped ganache truffle-like frosting I include here.
