Just the thing for a spring/summer biscotti flavour treat. Dried mango, chunks of dried and fresh (or canned) pineapple enliven an almond, orange, vanilla biscotti batter. This is sunny, sweet and tropically refreshing. I use pineapple and mango extract in this from www.SpiceEtc.com but you can use some other tricks (in the recipe) for equally marvellous flavour. There are different qualities of dried mango – some more sweet and tangy than others so taste before you buy. Costco sells a very good one or try Asian food markets. You could also throw in slivered, toasted almonds to this fruity batter.
