I’ve heard olive oil cakes are in – which is intriguing because I usually bake with butter and if not butter, vegetable oil. But light olive oil does seem to make this sunny cake especially moist and flavourful. Beware, this is a dramatically huge cake that feeds a crowd but it freezes well or divide the recipe in half and make a smaller one. Like all of my cakes called ‘bundt’, I use an Angel Food Cake pan for best results.
