Ancho Maple Glazed Sweet Potatoes

These are delectable, deeply braised sweet potatoes. Ancho is a smoky, sweet chilli powder. Together with the maple syrup, the ancho infuses a remarkable flavor to these sweet potatoes that is totally addictive. A perfect side anytime but especially nice at Thanksgiving.http://www.thespicehouse.com/spices/ancho-pepper to order quality ancho spice powder. If you don't have ancho powder, use regular smoked paprika or a touch of cayenne and regular paprika. I assure you this recipe will become a new staple side dish at your house.

3 pounds sweet potatoes, cut into 3 inch wedges, washed
½ cup pure maple syrup
3 tablespoons unsalted butter or light olive oil
1/2 cup brown sugar
½ cup orange juice
1 tablespoon ancho spice *
Salt, pepper

* Or smoked paprika


Preheat oven to 350 F.

Wash and prepare the potatoes and place in a large roasting pan. Cover potatoes with maple syrup, butter, brown sugar, orange juice, ancho spice and dust with salt and pepper. Toss with a spoon to coat with all ingredients.

Bake until well-roasted, soft and caramelized (the skins will almost blacken), 45-75 minutes.

Serves 4-6
