Apple Honey Cake

Apple slices nestled in my Majestic Honey Cake batter. It doesn't get any better than this!

2 or 3 apples - peeled, cored, cut in wedges
1/4 to 1/3 cup water
2 to 3 tablespoons sugar
Pinch cinnamon

Honey Cake
3 3/4 cups flour
4 teaspoons baking powder
1/2 teaspoon baking soda
4 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon clove powder
1/2 teaspoon allspice powder
1 cup vegetable oil
1 cup honey
1 1/2 cups sugar
1/2 cup brown sugar
4 eggs
1 cup brewed dark tea
1/2 cup apple juice

Preheat oven to 350 F.

Generously grease a 9 by 13 inch baking pan. Cut a piece of parchment paper to line the bottom.

To poach apples, saute them in water and sugar over low heat until they soften. Use only as much water as you need to cook apples slightly. Add a bit of cinnamon. Drain if necessary and allow to cool.

For the batter, place dry ingredients in a food processor and pulse to blend. Add remaining ingredients in order given and process to make a smooth batter.

Place apples pieces over bottom of prepared pan. Top with batter. Place pan on a baking sheet and then place in oven.

Bake for 60 to 70 minutes until cake springs back when gently touched.

Cool well and slice in the pan.

Serves 12 to 16
