Dark and Light Rye Flour

What is the difference between dark rye flour and regular rye flour?

Dark rye refers flour made with the whole berry. Light or regular and medium have some of the bran removed. For best flavor, I use dark rye flour (also known as pumpernickel flour). Stone-ground is best. Rustic breads and New York deli style ryes need the more robust dark flour.
