Extra Zesty Buffalo Wings

Flavor over heat in this case... A tip of the hat to Trappey's Red Devil Hot Sauce here because to me, it is the perfect Buffalo Wing hot sauce. Make these in the oven or on the grill. Your favorite hot sauce can be substituted, but you will have to season to taste. Trappey's Red Devil offers a lot of flavor without too much heat (don't let the quantity frighten you).  Don't forget - all Buffalo Wings can be made in a very hot (400-425F) oven if you are not keen to fry the wings. If you do fry them, use a home electric fryer or a deep wok. For more information on our absolute favorite hot sauce visit:  http://www.bgfood.s.com/

4 to 5 pounds chicken wings - split in half, tips removed
1 cup Italian salad dressing (bottled or homemade)
1/4 cup unsalted butter, melted
3 tablespoons vinegar
1/4 cup honey
1 1/2 cups (yes, 12 oz.) hot sauce such as Red Devil By Trappeys

Oil for Frying

Fry wings in hot oil until well browned. Place in a large stainless steel bowl.

Meanwhile (as wings were frying), mix salad dressing, butter, vinegar, honey and hot sauce together in a saucepan to warm up and meld flavors. Pour over fried wings and toss.

(Or marinate wings in marinade ingredients over night and then roast in a shallow roasting pan in a single layer. Roast in a preheated 425 F. oven for 35-45 minutes. Broil, placing roasting pan on lowest rack of oven, 3 to 5 minutes to crisp top of wings.)
