Gluten Free Oatmeal Cookies One

For gluten allergies or just for a change, these are simply great cookies. I created these years ago when one of my sons had a flour intollerance. I wanted a cookie we could all enjoy but suit his palate too. These are crisp and chewy and simply amazing oatmeal cookies. 

2 cups rolled oats
2 cups(gluten free) brown rice flour
2 cup light brown sugar
1 cup unsalted butter - melted
2 tablespoons maple syrup
1 tablespoon baking soda
2 tablespoon hot water
1 teaspoon vanilla

Preheat oven to 325 F.

Mix first three ingredients. Stir in melted butter, maple syrup and baking soda mixed with hot water and vanilla. Use hands to combine. Dough can be chilled if not using right away.

Line a large baking sheet with baking parchment. Roll chunks of dough into rounds and press lightly onto sheet. Bake 10 to 12 minutes until cookies are just golden. (Too long and they brown too much and become hard.)

Makes about 4 dozen cookies.
