Famous Coca Cola Brisket

Things go better with a nice brisket almost any time of year. This cola braised, specially spiced brisket is a slow-roast, favorite secret recipe.

1 brisket (approx. 4 lbs.- 1st or 2nd cut)
2 tablespoons vegetable oil
1 cup chopped onions
1/3 cup chopped celery
Salt, pepper to taste
2 garlic cloves, finely minced 
1 tablespoon paprika
1/2 cup ketchup
1/4 cup hot water
1 package dry onion soup powder
1 package (1 1/2 oz.) dry spaghetti sauce mix or 1/3 cup tomato sauce
2 cups cola beverage 

Preheat oven to 350 F.

Place meat in a large roasting pan and cover with oil on all sides. Sprinkle on onions and celery. Season with salt, pepper and paprika. Place crushed garlic on top. Mix ketchup with hot water, onion soup powder and dry spaghetti mix to dissolve dry ingredients. Add cola and pour mixture over meat. Cover pan with foil. Roast 2 1/2 to 3 hours. Baste every 20 to 30 minutes.

Serve sliced when done, or slice entire brisket and reheat in gravy next day (30 minutes in a 350 F. oven for extra-tender slices).

Serves 6 to 8
